The Blue oyster, sometimes confused for the Grey oyster, but distinct from the White or Pearl oyster is a fast-growing and gorgeous-looking variant of Pleurotus ostreatus. The younger the caps are, often the deeper their blue colouration, which tends to become grey-blue as they mature.
The Blue oyster mushroom is rich in proteins, vitamins, minerals and fibre, as well as antioxidants such as selenium. There are studies indicating that Oyster mushrooms might help reduce cholesterol whilst other trials are ongoing as regards the potential anti-carcinogenic potential of Oyster and other fungi species.
