We use a couple of different cultivars of Flammulina velutipes, and you would be hard-pressed to notice much similarity between them! One of them is cloned from a mushroom found within 2 miles of our base near Hay on Wye – this is the one we tend to grow for drying and is a wonderful, deep-orange colour. It loves hardwood substrate, as does our other cultivar which we grow for fresh sales. This one grows tall, thin and mostly white or cream coloured.
As with all of our fungi fruits, we aren’t going to tell you that this mushroom can be used as a medicine, but you will find a huge raft of information elsewhere online including many research papers and studies involving this species.
Our Enoki cultivars are grown on natural substrates with no chemicals or additives. We carefully control humidity, temperature and light to maximise the nutritional benefits of our Enoki.
