King Oyster – a well named beauty of a mushroom that is incredibly versatile and becoming a staple not only of the mycophile but of home kitchens and chefs. Also known as the Steppe boletus or cardoncello.
This outstanding mushroom fruit has a really gorgeous, dense, crunchy texture that some would say has a mouthfeel similar to white meats. It is therefore very popular in vegan cooking and on its own as a source of umami – or 4th taste – flavour in all sorts of dishes. The flavour is deliciously nutty – if you haven’t tried it, you are certainly missing out.
We slow-grow our King Oyster on a diet of straw and hardwood, and the resulting fruits are as regal as their name suggests. We don’t use chemicals or additives and carefully control humidity, temperature and light to maximise the nutritional benefits of our Pleurotus eryngii.
