Maitake, Hen of the Woods, the Dancing Mushroom. This slow-growing species is somewhat difficult to cultivate, but the results are worth the effort. Thankfully, we’ve done the hard part of culturing and growing the fruits for you to enjoy. Eaten in Japan for centuries, the mushroom can be eaten for it’s delicious flavour, but it is also well-known as an adaptogen.
As with all of our fungi fruits, we aren’t going to tell you that this mushroom can be used as a medicine, but you will find a huge raft of information elsewhere online including many research papers and studies involving this species. The folklore name in Japanese meaning Dancing mushroom comes from the joy that people would exhibit on finding such a valuable addition to their well-being.
Our Maitake – Griffola frondosa – are grown on natural substrates with no chemicals or additives. We carefully control humidity, temperature and light to maximise the nutritional benefits of our Maitake.
